Weekend Cooking

So I am a bit behind on the updating, but Friday, I decided I wanted to try something really new, so I made a vegetable that I only heard my grandma talk about, Rutabaga. I also tried a new spice cumin in my lamb burgers.

So first, the Rutabaga, my Grandmother loves these, but I had never had one. I have heard of lots of ways to prepare these, but I kept it super simple. I pealed them, cubed them and then roasted them in the oven with some olive oil and salt. When they were almost done, I added butter and sugar to them (sugar makes everything taste good right?). All-in-all, they were pretty good; even with the sugar glaze, they still have a mild bitter after taste. Raw, they taste kind of like a raw potato, but less starchier and they smell like raw cabbage, Weird.


As for the lamb burger…I love lamb…love the unique taste and the versatility of the meat. I usually do lamb chops or lamb ribs (yummy)… but this time I decided to make lamb burgers. I added diced onion, garlic, season salt, pepper, and cumin. Now, I have never used cumin ever, but since it came with my spice rack, I figure let’s give it a try. I have read that cumin pairs well with lamb, so give it a try right? Well it wasn’t totally bad, but it did alter the taste of the lamb majorly. I think it is a spice I will have to get use to, and will defiantly try it in something else, just not my lamb burgers. With my left over patties, I think I am going to crumble up and added to spaghetti sauce.


Saturday:

So Yesterday I tried my hand at my version of Veal ragu over Pappardella pasta, which turned out quite well and was very good. So I had some veal cube that is usually used for stew, but I sautéed them in a pan with garlic, onion and carrots; added white wine, and then some canned dice tomatoes. I served over pasta and a side of French bread. Very yummy.


I also tried my new Barefoot wine, Sweet Red with the ragu. I have finally found a red wine that I like. It is sweet, but not overly so, and it is nice and smooth.

Today I have a craving for fried chicken, but I think I might do a buttermilk fried chicken… Yummy fun.

Soup, Mussels, and Lamb

So it was a gloomy and chilly evening here in Oregon. So I decided to cook something that would make me feel warm and comfy. The items in the picture plus a few other items turned into 3 dishes.

The first dish was just a simple cream of mushroom and roasted garlic soup, right from the can. I added some sautéed baby bella mushrooms and sliced some french bread to go with the soup. I sprinkled a bit of black pepper on top. Very simple and very warm.

The second dish was more like an appetizer. Stuffed mussel on the half shell. Now again, nothing to outrageous here. Just some frozen mussel that I steamed in a pan. I then made a mixture of chopped garlic, some shredded extra sharp cheddar, chopped prosciutto, and italian bread crumbs with some olive oil. I put a little of the mixture on top of each mussel and then put it in the broiler for 2 to 3 minutes. Very good. The garlic and the prosciutto went well with the mussels.


Last, but not least, my lovely sweet chili lamb ribs. I love lamb… so good and taste like no other meat I have ever had. I simply seasoned the lamb with garlic powder, black pepper and seasoning salt. I let them bake in a 400 degree oven (temp varies depending on oven) until done and golden brown. I took them out of the pan and tossed them with some store bought sweet chili sauce. Very simple and very good.

Tomorrow I am really thinking, lamb burgers, but that could change.

Every night can’t be gourmet

So every night can not possibly be a gourmet meal, but the kids still gotta eat. These days I try my best to stay away from the process foods. Although they are cheaper than the fresh and or organic foods, they just are not heathy. But sometimes processed food is all you got.

I am trying to teach my kids about healthy eating and balance. I try to make most of our food fresh or semi-fresh, but again every meal can’t be restaurant status. Thus, tonight I kept it simple. Frozen green beans, shells and cheese from the box and pan cooked cubes steak. Very yummy.

Béchamel macaroni and cheese

Today I decided to make a different type of Mac and cheese instead of the traditional kind my mom and grandma makes. Tonight I made my very first Béchamel sauce which turned out great thus turning into individual Mac and cheeses. With that, I made bake turkey wings and glazed carrots.

It turned out to be a great meal that my family and I enjoyed greatly.

Learning about wine (Barefoot)

I have never been a wine person, I like fizzy drinks. But now that I am getting older, I decided to try out different wines to see what I like and what I don’t. Then, I can take the next step and pair wine with food.

I like sweet wines regardless of the color, that is my main critera for a good wine that appeals to me. My friends have all been raving about Moscato wine, and they have suggested two brands, Barefoot and Sutter Homes. I tried them both and I like Barefoot’s brands.

So sticking with Barefoot, I have tried just about all of their wines, and I have only liked 2wines and one bubbly, their Reisling and the Moscato (both wine and bubbly). Here is a list of what I have tried and not, and what I like and don’t.

Next I will try the Sweet Red, hopefully it is sweet. If anyone can recommend a good sweet, wine I would appreciate it.

Brussel sprouts

So I can understand why a lot of folks don’t like Brussel sprouts, especially when they are simple steamed. Tonight, for dinner I made fried chicken Rice pilaf and stir-fried Brussel sprout in a salt pork and white wine sauce. It turned out to be quite good.

I am also not big on wine, but I have been trying different ones to see which I prefer. With dinner tonight I had a glass of Moscato by Barefoot.

Apple and Onion Glazed Pork Steaks

Okay, so yesterday I decided not to cook anything super extravagant, but keep it simple with a flare. So I took pork steaks and pan cooked them in olive oil. Then I added some slice granny smith apples that I had left over from a few days ago and added them to the pan when the pork steaks were done, with a little bit of chopped yellow onion, sugar and a touch of white wine. It made a nice glaze for the pork steak. With that we had yellow rice and sweet peas. Very simple meal with a flare.

2 Pies, 1 tart, and Paella

Okay so Saturday, I decided to be super adventurous and make my first apple tart and Paella and two pies. Now the pies were a sweet potato pie, which I am a pro at making and could make with my eyes closed; the second was a sweet potato cheese cake pie, which is only my second time making it. I have to admit, the first time I made it was much better than this time, probably because I was trying to do to many things at one time. I mean I can multi-task with the best of them, but 4 dishes in 4 hours, yes 4 hours, each having lots of steps to complete, is pretty dang-on good. Never-the-less, the sweet potato cheese cake was a bit too lemony which isn’t actually a bad thing if you like lemons, but I will keep working on the particular dish.

Now for the apple tart, as a rule, I typically never make my own crust, just because I suck at it, but this time it came out very good. The tart on a whole was good; however, I used granny smith apples. These apples are fine if you like a sour apple, but I am a sweet apple kind of girl, so next time I will try a sweeter apple. However my husband likes it, although he said he would like it “more sour…” go figure.

The Paella was something I have always wanted to try, and for the first attempt I think it came out better than I could have expected. My oldest daughter is in love with it. The paella has shrimp, lobster tail meat, andouille sausage, and chicken in it. However, I think the next time I make it I will use the Arborio rice instead of the Long grain rice.

Over all I think it was a raving success. Don’t know what my next food venture will be, but I will definitely enjoy it.

Beef burgundy

So yesterday I made my take on beef short rib burgundy and it was good. I added red potatoes to it and a side of sauté green beans, it turned out well for my first time making it. My daughter and I were so stuffed we just sat at the table for a good 15 minutes. I so enjoy making new foods.

Then today for lunch, I grilled some French bread in butter on top of the stove and topped it with grilled vegetables and some of the beef from last night. It made an out standing snack. I still have some of the veggies leftover that I am thinking about adding to some penne pasta.

Made this lovely pasta dish today. So good. Perciatelli Pasta with a mushroom and garlic cream sauce topped with prosciutto, with a side of lamb ribs.

The pasta dish was quick and simple and made in under 30 minutes. So much fun and yummy to my tummy. Still haven’t tried that chicken Saltambocca. Maybe next weekend.

So we all have our own ways to express our creative side. I happen to express mine best in cooking, but I do other creative things. I found that I like to draw and paint which I couldn’t do when I was younger. My brother was always the artist in the family. The best I could do was draw stick figures, although I did draw a very good Benny the Bull (Chicago Bulls).

I like to do creative thing around my house. For example my daughters had these plan old ply-wood book shelves. They had seen some times, especially since they belong to there dad and his sister. Never the less, to save some money and to express my creatativity, I bought some fabric and covered this shelf. I did the first one for my youngest daughter and it came out pretty well for the first one. When I start on my oldest daughter’s, it should come out better. Just something to do in the end, better than watching mind numbing tv.

I love to cook. It is almost never a job, but a relaxing passion. Thus, this blog will probably end up talking about food at some point or another.

It is my wish that one day I will open up my own restaurant, but until then, I will continue to experiment on my family and friends. I can cook just about anything or will give it the old college try. A big kitchen in my new house was a must.

Yesterday I made squash and mushroom ravioli (store bought. takes to long to make) with baby bella mushrooms and petite asparagus in a sherry butter sauce, topped with prosciutto. So yummy.


I have a frozen Chicken Saltimbocca in the freezer that I am going to try. If I like it I will attempt to make it from scratch.

Ok, so this is my first blog. Thought it would be a good idea… to expose the world to my babbles and dabbles, and life of a mostly normal person. So we will see how this goes.

So, my family and I just brought a house here in Oregon. We have been here for 6 years and decided that apartment life was the pits and why not buy. Yeppie for us, new house, love it; 29 years old and a home owner.

Well we are two weeks into living in this 4 year old house and we are already calling a plumber. In the upstairs bathroom, we literally had a fountain coming out of the sink. Crazy right, could be worse I suppose. The joys of homeownership I guess.
