Simple Perch and Bok Choy lunch

So lunch doesn’t always have to be complicated or fast food, or cold cuts on bread. So today I made a simple pan cooked perch fillet. It is easily found in the frozen fish section at Walmart for most Americans, but any fish can be substituted for perch. Use what you like. Simply seasoned with coarse kosher salt, black pepper, garlic and onion powder. Cooked in a pan, with a mix of olive oil and butter.

For the side, I made a quick sauté of Shanghai bok choy fresh garlic diced, and sliced shallots, seasoned with salt and black pepper, cooked in olive oil and deglazed with a little white wine.

Simple and light. Enjoy
