Christmas 2023 – Cook with Me

Christmas 2023 was a bit different this year. It was my youngest daughter and myself for most of the day. While she relaxed, with the occasional assist, I stayed in the kitchen and prepared Christmas dinner. My oldest daughter was away visiting her boyfriend’s family, and my partner had to works. So the festivities this year would not begin until after 8:30 p.m.

I spent the day doing what I loved, cooking. I took my time chopping, slicing and dicing until my heart was content… or my arms got tired and my back began to hurt.

Nevertheless, all this was different because, usually the kids would be up and ready to open gifts; everyone would be home; Christmas breakfast would have been ready to been had. But all things change, nothing stays the same,

This year, I decided to make Gloriousgal’s Ratatouille, which consisted of carrots, zucchini, yellow squash, and king oyster mushrooms, bacon rapped carrots, veggie stuffing, roasted potatoes, candy sweet potatoes, and 2 apple and peach pie.

For me, it is so important to acknowledge and celebrate the milestones and achievements of my young ones. Sometimes it’s not as extravagant of a celebration as I would like; sometimes it’s just a celebration at home with family and friends. But either way, I try to put my best foot forward, regardless of how I feel, and show my babies a good time. Let’s prep for a home celebration for a great achievement! April Diaries: Unboxing Instant Dutch Oven/ Cook with Me: Braised Pig Feet and Japanese Style Vegetable Curry

I really love cooking; the chopping and slicing are therapeutic, the aromas are intoxicating, and the methods are sometimes routine but comforting. However, I love my appliances that tend to make my life and the cooking process more manageable.

I recently purchased an Instant Gourmet Dutch Oven. This is the third Instant product I have purchased, and I absolutely love them all. I have been meaning to buy a traditional Cast-Iron Dutch Oven for many years, as this was a staple pot in my mom’s kitchen. Although the one I purchased looks nothing like the one my mom used, It is heavy and cooks very well with the electric heating element base or alone on the stove or in the oven.

The Time I Got COVID | Cooking | Vlog


Back in October, 3 out of the 4 people in my house got COVID. It was difficult, but all things worked out just like they were supposed to. Prior to realizing that I was sick, I made 2 huge pots of soup that sustained us through our illness.

During this time, we were surrounded by wildfires in the Portland Oregon Metro area and we had very nasty smoke which complicates things when you’re sick and when you have asthma. But we survived by the grace of God.

Meal Prepping For Surgery Recovery

Back in July, I had another procedure. We are adding this to the numerous procedures and surgery I have had in the last 10 years. Nevertheless, this time it was for Trigger Finger Release on my left hand, which meant that I was not going to be able to use my hand like normal for at least 2 weeks. This meant, no heavy lifting, no washing dishes, and definitely no cooking. But, like all of my past surgeries, I always try meal prepping for myself and my family prior. Meal prepping helps me to stress less about what my family is going to eat, although they are capable of fending for themselves, and it makes me happy to know I have taken care of my little Tribe.

Preparing meals is also important in my house because everyone in my house is on a different schedule most days. I am the glue that keeps them all running and feed as they go about their busy days and evenings. Also, 8 out of 10 times, I do not eat the same protein source as the rest of my family does.

In this video/vlog, I show you what and how I meal prep for this procedure and show some of my recovery updates along the way.
