Meal Prepping For Surgery Recovery

Back in July, I had another procedure. We are adding this to the numerous procedures and surgery I have had in the last 10 years. Nevertheless, this time it was for Trigger Finger Release on my left hand, which meant that I was not going to be able to use my hand like normal for at least 2 weeks. This meant, no heavy lifting, no washing dishes, and definitely no cooking. But, like all of my past surgeries, I always try meal prepping for myself and my family prior. Meal prepping helps me to stress less about what my family is going to eat, although they are capable of fending for themselves, and it makes me happy to know I have taken care of my little Tribe.

Preparing meals is also important in my house because everyone in my house is on a different schedule most days. I am the glue that keeps them all running and feed as they go about their busy days and evenings. Also, 8 out of 10 times, I do not eat the same protein source as the rest of my family does.

In this video/vlog, I show you what and how I meal prep for this procedure and show some of my recovery updates along the way.

Cooking Vlog – Making Stuffed Cabbage Rolls & Beef Cheeks & Veggie Soup

Hey guys, I pray you are all well and safe. With prices on the rise for everything, I am trying to stretch my meals as much as possible. In this Cooking vlog, I make Stuffed Cabbage Rolls for the first time and Beef Cheeks and Veggie Soup.

I grew up eating stuffed peppers; my mom made them, and they were always so delicious. We also ate a lot of cabbage, but never cabbage rolls. I’ve seen several recipes and videos of people making and enjoying stuffed cabbage rolls and it seemed like a recipe that could last for several meals and that it would be easy to make. However, of course, I had to make the recipe my own and make a few adaptations for the things that we do not consume like tomatoes. So have a look at the video below to see how I made my Cabbage rolls.

Beef Cheeks

With food prices being so high in the United States, it’s hard to stay within a budget for food, especially when one is trying to feed a college student and a teenager; my kids have extremely healthy appetites. I must be very intentional about what I buy, but still make sure that when I cook, it tastes good. The advantage that I have is that growing up, we didn’t have a lot of money. My mother made a little something into a lot and made it taste good. Back when I was younger, all the odd cuts of meat were extremely inexpensive, like neck bones, organ meat, cheeks, feet, and such. But now, people have gotten hip to the fact that these inexpensive/trash pieces are some good eating.

I grew up eating chicken hearts, pig feet, hog jowls, and the likes but never had any beef cheeks. It was a nice cut of meat and not too expensive, so I decided to pick up a pack and try it. It looked like a roast with a bit more fat on it, so what better way to cook such a cut than to make it into a soup or stew. Check out the video below to see the process.

Christmas Eve Cake Mix Cookies | Christmas Day Belgian Waffle and Hotpot

Hey Foodie Tribe, I hope your holiday thus far has been fun and relaxing. In this vlog, my family and I continue our traditions with making cookies on Christmas Eve. This year we made cake mix cookies again as well as homemade rice crispy treats all while cracking jokes and reminiscing.

Christmas morning started of rocky. After make our usual Christmas morning Belgium waffles, I found that our syrup had some weird white stuff in it. Fortunately I was the only one that at it, unfortunately, it made me sick, even though I only at a small portion.

However, after a nice nap, I made HotPot for Christmas dinner.

My Daughter’s 14th Birthday |Korean-inspired Dinner Vlog

Hey Food Tribe, I am so late in posting this, but better late than never. Back in mid-November, my youngest daughter Amarie turned 14.

And because of how the world is currently, we celebrated indoors with a special dinner. Last year she asked for a Japanese-inspired dinner, this year, she requested a Korean-inspired dinner. I obliged her, as I love all Asian food, but Korean food is at my top.

I made a spread for my baby girl including Royal Tteokbokki, pork and beef lettuce/perilla wrap, pork neck bone and mussel soup, and more.

Weekly Vlog: Life Update, Journal, and Cooking

Hey All, it has been a while. Hopefully, this post finds you all healthy, safe, and doing well! There has been a lot going on with me, especially health-wise, that has kept me away from virtually all things social media. Except for an occasional Instagram post, so follow me if you would like to stay up-to-date with me. However, this Weekly Vlog will explain a lot.

In this Weekly vlog, I give a life update; talk about my fibromyalgia and cluster headache diagnosis; show you my new journaling styles: bullet journal, productivity journal, and health journaling, and make chicken and veggie enchiladas with green chili sauce; I always have to cook something.

Cake Mix Cookies 3 Ways

Hey everyone, I hope you are having a great December and that your Holidays have been relaxing. Christmas Eve, traditional, my daughters and I make cookies. But now they are getting older and not so important to make cookies, which is fine. But I still like to do it, so this year I decided to try a new recipe that I saw from one of my favorite YouTuber. The recipe has been around for a long time, but I just found it recently. Cake Mix Cookies are so easy and you can add whatever flavors you decide.

For my Cake mix cookies I used Vanilla cake mix but you can use which ever you like and I also changed the oil. I used butter instead of vegetable or canola oil. So below I will include the base recipe and be sure to check out the video to see my process.

Celebrating My Daughter’s 13th Birthday | Lockdown Edition | Asian Themed Birthday Dinner

Hey Guys, I hope you are all staying safe during these uneasy times. On November 16th, my youngest daughter turned 13. I had plans to take her out to this new Asian Dumpling restaurant here in the Portland Metro area, but unfortunately, our Covid numbers have spiked so our state is back in lockdown. But that didn’t stop me; since we couldn’t go to the restaurant, I brought the restaurant to her. 13 is a special birthday, officially a teenager; I wanted her to feel extremely special on her day, even though she still had to go to online school. So for this Birthday, I planned an Asian Themed Birthday Dinner complete with menus, placemats, decor, and more. Week in My Life Vlog | October 26- Nov 1 | Battling Depression

Thanks so much for joining me for another week in my life vlog. This week I wanted to be extremely transparent, while still being creative with the weekly vlog. I have battled depression for over 15 years and in this vlog, I show you what I go through during one of my many depressive episodes and how I try to bring myself out of it. Depression is a real disease and a lot of people suffer from it, more than we know, and are ashamed to speak out. I was once one of those people, but today, I hope this video helps someone who is also struggling. Question: What do you do to help pull yourself out of a depressive episode?

A Week In My Life Vlog | October 5-11 | Pt. 1 | Preparing for Surgery | Meal Prep
