Hey all, I hope this short post finds you all doing well.
Life has been really throwing me some hard and fast balls this year which has prevented me from posting like I want to. But, I hope to get back in to the swing of things soon.
In the mean time, my daughters and I have been out trying a few new restaurants. We checked out 2 ramen spots, 1 Korean Chicken and 1 Korean Bbq restaurants.

The year 2023 was a rollercoaster ride, but I persevered. As the year drew to a close, I resolved to start 2024 on the right foot by being as productive as possible.
They say that the way you begin something sets its trajectory, so I decided to tackle the tasks I had been putting off and start planning my goals for the new year. I even made time for my passions, like crafting and cooking, while staying focused on my productivity.

For me, it is so important to acknowledge and celebrate the milestones and achievements of my young ones. Sometimes it’s not as extravagant of a celebration as I would like; sometimes it’s just a celebration at home with family and friends. But either way, I try to put my best foot forward, regardless of how I feel, and show my babies a good time. Let’s prep for a home celebration for a great achievement! This means spending time; going to lunch; making memories; listening to the old stories; loving on them; and appreciating them while they are here. Time is so finite, so fleeting, and moving so fast these days. We make time for the things and the people that are important to us. I was excited to host my mom this summer for almost 2 months. It had been 4 years since we had seen each other in person because of the pandemic. My mom and I live far from one another, but over the past 10-plus years, I was used to her coming out to my house every summer for a month or more. But because of circumstances that we could not control, that was on hold.
Whenever my mom comes, I always like to spoil her, especially when it comes to food. Watch as I cook nostalgic food for my mom and we hang out and reminisce in the kitchen.

I really love cooking; the chopping and slicing are therapeutic, the aromas are intoxicating, and the methods are sometimes routine but comforting. However, I love my appliances that tend to make my life and the cooking process more manageable.
I recently purchased an Instant Gourmet Dutch Oven. This is the third Instant product I have purchased, and I absolutely love them all. I have been meaning to buy a traditional Cast-Iron Dutch Oven for many years, as this was a staple pot in my mom’s kitchen. Although the one I purchased looks nothing like the one my mom used, It is heavy and cooks very well with the electric heating element base or alone on the stove or in the oven.

Let’s start with my daughter and me trying Two Hands Fresh Corndogs located at 2055 NW 185th Ave, Hillsboro, OR 97124 in Tanasbourne Village. The place is always busy, so I suggest ordering online. I order their Mega-Star Set which has 5 Corndogs that you can mix and match what comes inside. Check them out and then come back and let me know what you think. Back in October, 3 out of the 4 people in my house got COVID. It was difficult, but all things worked out just like they were supposed to. Prior to realizing that I was sick, I made 2 huge pots of soup that sustained us through our illness.
During this time, we were surrounded by wildfires in the Portland Oregon Metro area and we had very nasty smoke which complicates things when you’re sick and when you have asthma. But we survived by the grace of God.

Earlier this month, my family and I attended The Grotto’s Festival of Lights. The Grotto is located at 8840 NE Skidmore Street in Portland Oregon and is an outdoor Catholic Shrine and Sanctuary. I had always wanted to come and visit here, and this was my opportunity, especially since my oldest daughter also had her Conducting Debut at this event. This was definitely a proud mom moment.

We also checked out Bag O’Crab located at 3255 NE 82nd Ave in Portland, Oregon 97220. Which was so good. If you like crab and seafood boils. I suggest you give the a try.
