Chronic Illness Diaries: Staying Positive in Hard Times

This chronic illness vlog finds me in April, a few days away from my 43 birthday. This day, I was having a hard time, but had to encourage myself into and staying in a positive mindset, which can be difficult when traversing hard times. However, I am encouraged, and want to encourage all of you that your current trial is only temporary. 

At times we are so overwhelmed by our current circumstances that we forget that “This too shall pass”. At times we have no one around to remind us, encourage us, or speak positivity over us. But there is always you! Get in the mirror and speak, encourage, and remind yourself: This trial is temporary; this pain won’t last; it won’t be like this always; your latter is greater than your former; your best is yet to come! You are a light in the darkness!

Celebrating Daughter’s University Graduation Vlog

One of the proudest moments for a parent is to see your child graduate college or university, walk across the stage, and receive that long-awaited diploma. But just as much as I am proud, my kid was even more so.

I want to give a heartfelt thank you to everyone who has prayed for, spoken words of encouragement, given financially, etc to Alexis. We greatly appreciate each one of you. And thank you to friends and family, both near and far who came to the house and dropped off cards or came in to help us celebrate Alexis on this special day.

After everything was said and done, man I was spent. I could barely move the next day. But I would and will do it all over again for my babies.

Watch as family and friends come together and celebrate this monumental occasion. Class of 2023!!!!

I was excited to host my mom this summer for almost 2 months. It had been 4 years since we had seen each other in person because of the pandemic. My mom and I live far from one another, but over the past 10-plus years, I was used to her coming out to my house every summer for a month or more. But because of circumstances that we could not control, that was on hold.

Whenever my mom comes, I always like to spoil her, especially when it comes to food. Watch as I cook nostalgic food for my mom and we hang out and reminisce in the kitchen.

April Diaries: Unboxing Instant Dutch Oven/ Cook with Me: Braised Pig Feet and Japanese Style Vegetable Curry

I really love cooking; the chopping and slicing are therapeutic, the aromas are intoxicating, and the methods are sometimes routine but comforting. However, I love my appliances that tend to make my life and the cooking process more manageable.

I recently purchased an Instant Gourmet Dutch Oven. This is the third Instant product I have purchased, and I absolutely love them all. I have been meaning to buy a traditional Cast-Iron Dutch Oven for many years, as this was a staple pot in my mom’s kitchen. Although the one I purchased looks nothing like the one my mom used, It is heavy and cooks very well with the electric heating element base or alone on the stove or in the oven.
