Baked Chicken with Peach BBQ Sauce

So I usually just buy my BBQ sauce from the store, but tonight I decided to make my own. I made baked chicken with a Peach BBQ Sauce.So the chicken I did my usually way. Season both sides with Seasoning salt, black pepper, garlic and onion powders. Bake until done.For the sauce. I chopped one Shallot and 2 tablespoons of garlic and saute until tender in 1 and 1/2 tablespoons of butter, however, olive oil can be used. Add salt and pepper to taste.To that, I added 1 and 1/2 teaspoons of dijon mustard, 2 tablepoons of wostershire sauce, 2 tablespoons of lemon juice, the juice from one and 1/2 29oz can of peaches. (make sure it say's 100% juice not syrup) Bring to a boil and then turn to a simmer.Take the peaches and put them in a bowl or in a food processor and give them a quick mash or a quick blend in the processor. You want them to be chunky but not whole. So if you are using a food processor, pulse for about 10 seconds. Add the peaches to the sauce, and let simmer for about 5 minutes. Stir. Taste your sauce. If it is to tangy for you added some sugar until it is as sweet as you like it. I added about 3/4 of a cup to mine.Also, my little secret to this sauce is to add a few shakes of Allspice. It is very subtle, but good.Let the sauce cook down for another 5 minutes and then added some over your chicken or other meat.With this chicken, I made Farfalle pasta mix with corn, parsley, garlic, salt and butter.With the leftover sauce, place in a container and freeze or place in fridge, or get a condiment bottles and fill for easy use anytime, but keep in fridge.
