Veggie Noodle Stir-fry

So everything here is fresh except for the Yaki-soba noodles (you can find in the grocery store), and the Hoisin sauce.So for this a wok is best. In the wok I added about 2 to 3 tablespoons of olive oil and heat on high. Added 1 tablespoon of mince garlic, and about a tablespoon of fresh ginger chopped or sliced thin to the oil and let cook for about 2 to 3 minutes until they become aromatic.Added fresh whole green beans and stir-fry. Added kosher salt and black pepper to taste. When the green beans start to brown, added baby bella mushroom (they have been quartered) and cook for and additional 3 minutes. Then add chopped baby bok choy and stir- fry for another 2 minutes.I added a handful of mung bean sprouts and cooked for 1 minuteThen added 2 packs of the Yaki-soba noodles. Heat thru, and the noodles will loosenI removed from heat and added hoisin sauce and mixed. Serve hot. This is a very light meal, no meat, but any meat can be added to the dish.
