Lamb Chops
As I have stated before, my favorite meat is probably lamb. Just like any other meat, there are different cuts, but I think my favorite would be a rack of lamb that is sliced, so it now looks like a chop. There are many ways to prepare lamb, but below is my favorite.So let's start with the sides, because the potatoes take the longest. I used purple fingerling potatoes (yes they are really purple). Slice them in half and coat with olive oil and sprinkle with kosher coarse salt in a baking pan. Bake in the oven for 30 minutes or until tender at 350 degrees F.Slice any type of mushroom desired. I use white mushrooms. Also slice a small white onion and cut about an inch or so off the stem of the asparagus. One teaspoon of finely diced garlic is also needed.
In a frying pan, melt about 2 tablespoons of butter. You want the heat to be about medium high.
Add onion and garlic and let cook for about 3 minutes, or until you begin to smell the garlic and onions.
Add in the mushrooms.
Let mushrooms cook until they begin to wilt down and begin to brown.
Move the mushrooms to one side of the pan, and if needed add another tablespoon of butter, then add the asparagus.
Let the Asparagus cook until they are as tender as you desire them, added some kosher salt to them while they are cooking.Now for the lamb. Season both sides with a little seasoning salt, garlic and onion powders and black pepper.
In another frying pan, added 2 to 3 tablespoons of olive oil and let it get hot. Then added the lamb.
Cook the lamb until desire quality. I like my lamb medium well done, but that is not the case for everyone.
By this time, your potatoes should be done. Remove them from the oven and plate your food and enjoy.
