Valentine's Dinner
I am so behind on my posting, but Valentine's Day for me and my Hubby was mellow. We did nothing special, but I did make a special dinner.Lobster, mussels and shrimp pasta with garlic bread and for dessert, vanilla cupcakes with strawberries.So for the pasta I used Pappardella Pasta. Cook as directed. The garlic bread was store brought.So for the lobster, mussels and shrimp. First melt butter in a pan.
Chop one shallot and 2 cloves of garlic and cook them in the butter for 5 minutes.
Add mussels (the ones I got were greenshell mussels on the half shell) and cook until mussels are either unfrozed or open.
Remove mussels from shell and leave in pan.
Add clean de-shelled shrimp, about 10 to the pan.
I had one 8 oz raw lobster tail, that I removed from the shell and cut in large chunks.
After adding the shrimp, add the lobster meat
Let cook for 2 minutes and then add white wine to deglaze the pan and create sauce. Also add salt and black pepper.
Let the alcohol cook out and then added a small pad of butter to thicken the sauce. Then turn off heat and added pasta.
Mix everything together, then plate and serve while hot.
The dish was served with a glass of Hogue's Late Harvest Riesling
Dessert was very simple. I made vanilla cupcakes (any box brand will due). I frosted them with cream cheese icing. I then macerated for 6 hours, strawberries that I cut in half. I topped my cupcakes with the strawberries and poured some of the juice over them as well. Super easy, but very sweet.
