Fried Rice

Fried rice is easy to make, and the upsides to making it at home are: it cost less than take-out, you can make as much of it as you want and you know exactly what is in it.So first things first, make some white rice. Any kind of white rice is fine, instant, 15 minute steam, whatever. After it is made, put it to the side. Also a Wok is needed.So chop one small yellow or white onion, and slice some green onion. Add 2 to 3 tablespoons of olive oil to the Wok and heat on high. Added onions and stir fry for 2 minutes.Push the onions to the side of the Wok and scramble 2 eggs on the other side.Added white rice to the Wok and mix.Season mixture with a little kosher salt and black pepper, then added 1 to 2 tablespoons of rice wine vinegar and mix. Turn heat down. Add soy sauce, mix again and serve. I made salt pork and crushed it on top of the rice. This is just something I liked and is not a must.
