Pan cook Flounder with Sweet Pears

Flounder is a very mild flakey white fish, and for this particular recipe, either fresh or frozen flounder fillets can be used (I had frozen).I used two fillets and seasoned both sides with seasoning salt, black pepper, garlic and onion powders.Peal one pear and slice.Two pans are needed, one for the fish and one for the pears. Both pans need about 2 or 3 tablespoons of butter.Added pears to one of the pans and begin to cook them and let them soften.As they start to brown, added sugar (more or less depending on how sweet you like it) and a few shakes of Allspice.Now at this point, if you like a little spice, you can added a little red pepper, chilli pepper or red pepper flakes. However, if you just like it sweet, leave it alone (I left mine sweet this time). Let the fruit simmer on low until it thickens.As for the fish, cook in the other pan until it is cooked through and brown on both sides.When the fish is done, plate and then pour the Sweet Pears on top and enjoy. This goes great with a glass of white wine, or Late Harvest Riesling.
